Effect of microwave curing equipment on tea processing

It is necessary to improve the quality of tea processing and modernize the tea industry. Today's advanced microwave technology has shown good application prospects in the processing of tea. Production of green tea, oolong tea and other teas, all need to be heated to remove the activity of polyphenol oxidase in tea, to achieve the processing requirements of evaporation of water, volatile grass odor and soft tissue. At present, the production method is often used to carry out the greening method, and in a few places, the steaming method is adopted.
The application of the microwave killing equipment in the tea greening process mainly utilizes the thermal effect generated by the microwave. When the magnetron produces microwave irradiation to the tea leaves, the polar molecules inside the tea leaves are affected by the periodic changes of the microwave, and periodically move with the microwave. Due to the high frequency of the microwave, the internal molecules of the tea are collided at high speed to generate friction, and the generated heat rapidly increases the temperature of the material, thereby achieving a rapid heating effect.
Practice has proved that the quality of the tea processed by the microwave killing equipment and the fried green method is good, there is no significant difference, but the microwave killing time is short and can be carried out continuously. Because of the high moisture content of steam, the tea leaves after greening have almost no weight loss, and the outer layer of the raw material is affected by high temperature, some chlorophyll is destroyed, and the nutrients contained in the raw materials are lost with the condensed water, resulting in a decline in the quality of the tea.
The insecticidal effect of the insects in the tea is closely related to the dielectric properties of the tea and the insect body. When the water content of the tea is less than 12%, the microwave has a strong insecticidal effect. In addition, tea leaves are highly susceptible to moisture and mildew during processing and storage.
