Determination of organic acids and preservatives in wines and spirits - LUMEX capillary electrophoresis

The organic acid map in wine is an informative parameter because it reveals important features of the entire process. It is also one of the most important standards for wine certification. Like cognac, brandy, or whiskey, the presence of certain organic acids can reveal the extent of damage from distillation or maturation or reveal the effects of precipitation during storage. Certain organic acids (sorbic acid, benzoic acid, ascorbic acid) can be used as preservatives and their use is strictly controlled. Although the presence of sorbic acid in alcoholic beverages is natural in some cases, in most cases it can indicate that the wine producer is seriously violating the process or even completely forging.
